I HATE cauliflower! It smells awful and tastes awful, but that is just my opinion. I finally found a recipe that would allow me to make some awesome grits from cauliflower and it even tastes good!
Here is what you will need:
- 4 strips of bacon (save at least 1 tablespoon of the fat)
- 3 cups of riced cauliflower (you can use a cheese grater, but a food processor will make the cauliflower smaller)
- 1/2 small onion (organic)
- 1 1/4 cup of almond flour learn how to make it here or buy it
- 1 cup of chicken broth (organic; low sodium)
- 1 cup of 2% or whole milk (organic; grass fed)
- 1/4 tsp. garlic powder
- 1 tablespoon of butter (the real stuff not margarine and preferably grass fed like, Kerry Gold Irish Butter).
- 1 ounce of Havarti cheese, shredded (grass fed)
- Sea salt to taste
1. Chop
the cauliflower until you have a very fine grain. That is why the food
processor is nice because it gets the job done quickly. Set the riced
cauliflower aside.
2. In a
medium skillet, over medium high heat, cook the bacon to your desired
crispiness (save the bacon fat)! Set the bacon aside.
3. In the
same skillet, heat the bacon fat on medium high heat. Add the onions and saute
for about 3 minutes. Add the cauliflower, chicken broth, and milk and bring to
a boil.
4. Add the
almond flour and seasonings, stir to combine.
5. Cover
the skillet and let simmer for 15 – 20 minutes, until the cauliflower is soft.
If it is too thin, add more almond flour. If it is too thick, add more chicken
broth.
6. Stir in
the butter and cheese, remove from heat.
7. You can
sprinkle the bacon on top for added texture and flavor if you would like. We
really just needed the fat.
If you want to spice it up, just add paprika or cayenne. You can
also add shrimp to the top and you have shrimp and grits! YUM!
